Someone told me this could be on an interview I have coming up? What should I say?
Say you would do the job of whatever the job is that you are applying for.
The question is an old career finding tools. What ever you would answer to the question is was you should do for your career. Example(if you would build wood furniture, you should be a wood worker) etc

Pay off my student loans and get that monkey off my back. After that, I would set up some IRA's for retirement, seek the advice of an experienced financial consultant to make sure I'm not exploited, and live as much of a quality life that I could. I'd be sure to make sure that I could make the money last during my lifetime, and pay for my children's college education.

Do you have no plans? Is there no place to which you would like to travel? Do you have dreams of fast vehicles or big homes? Some dream of new clothes every day or trying the most exotic and expensive foods on the planet.
